Avocado Toast

• 2 slices of bread
• ½ avocado
• Pinch of pink salt
• 1 tsp olive oil
• 1 tsp lemon juice
• 3 cherry tomatoes
• Microgreens (for decoration)


Toast the bread in the toaster. Be sure to choose a ripe, soft avocado. Cut it in half and keep refrigerated the part that has the pit (keeps better). Remove the avocado from the other part with a spoon and mash it with a fork in a small bowl. Add a pinch of salt, olive oil and lemon juice.

Place a smashed avocado on top of the crusty bread, top with small colourful cherry tomatoes.

You can garnish with micro greens or coriander leaves. Also, you can add some pepper.
