Pineapple Gazpacho

Ingredients:

• 1 cup cucumber cut into squares
• 1 cup pineapple cut into squares
• ½ green bell pepper cut into squares
• ½ cup fresh pineapple juice
• ¼ cup fresh celery juice
• 1 Tsp lime or lemon juice
• Pinch of salt

Instructions:

Cut the cucumber, pineapple and green bell pepper into small squares.

Juice the pineapple and celery.

Blend all ingredients until smooth (reserve 1 tablespoon each of sliced ​​cucumber and pineapple for serving).

Pour the mixture into a bowl. Garnish with reserved cucumber and pineapple and green leaves (e.g. cilantro or mint). You can also splush some cold pressed oil.
