Time:

15 min

Ingredients:

1 apple (cut into cubes)
1/4 avocado (thinly sliced)
1 tbsp. purple cabbage (shredded)
1 tbsp. green peas
1 tsp. pickled radish
1 tbsp. carrot (grated or cut into small pieces)
1 tbsp. almonds (toasted, chopped)
1/2 cup parsley (finely chopped)
1/2 cup arugula (finely chopped)

Dressing
1 tbsp. cashew butter
1/2 tsp. miso (fermented soy paste, salt substitute)
1 tbsp. lemon juice
1/2 tsp. sesame oil
1 tbsp. water

Instructions:

This is a recipe based on the general principle of assembling a jar. You can replace the ingredients with the fruits and vegetables you have at home.
The principle of assembling a salad jar:
1. Dressing (fats). Pour 2-3 table spoons of dressing into the bottom of the jar. This can be a given recipe or peanut butter, tahini, olive oil, mustard, or any other dressing.
2. Crispy fruits and vegetables (carbohydrates). Here I used apples, carrots and purple cabbage. You can use cucumbers, broccoli, cauliflower, celery, pineapple, berries and more.
3. Pickles (fermented food for healthy microbiome). Instead of pickled radish, you can use pickled cabbage, pickled mustard seeds, pickled cucumber and others.
4. Grains (protein). Green peas can be replaced with cooked chickpeas or beans, tofu cubes and others.
5. Topping. I used toasted almonds as a topping in this recipe, but the list of alternative products can be endless - peanuts, sesame, walnuts; You can also use dried fruits - raisins, cranberries, plums.
6. Green leaves. As an alternative to parsley and arugula, use spinach or lettuce. Fill the jar with greens and cover it.

Before serving, shake the jar well and the dish is ready. If you are out for a walk, you will only need a fork. If you are eating it at home, you can take it out on plate, stir it so that the dressing is evenly coated. You will have a well balanced and nutrient-rich dish.

You can take this salad with you for lunch instead of unhealthy food and have a balanced and nutritious meal. By changing the ingredients, you will have a different salad every day.

With such a salad, you can fill several jars for yourself and your family members, or prepare a supply for two or three days - it lasts perfectly in the refrigerator for 2-3 days.
