Carrot Frittata

Ingredients:
- 1 carrot
- ½ cup cabbage
- ½ cup spinach
- ½ bell pepper
- ¼ cup flour (wheat, rye, chickpea, almond)
- ½ tsp Svanetian salt (or other spices)
- ½ cup water
Date chutney
- 2 dates
- 2 tbsp vinegar
- 2 tbsp soya sauce
1 tsp olive oil - for frying
Instructions:
- Grate the carrots
- Grate or finely chop the cabbage (you can use both white and purple cabbage, or both)
- Cut the bell pepper
- Stir in vegetables, flour and spices. Pour water and stir again
- Grease a preheated pan with oil and fry the vegetable mass like pancakes
- Take out the pit from dates and soak them in water, blend with the rest of the ingredients
- Dip the fried pancake in the date chutney and enjoy
