Carrot Frittata

Ingredients:

  • 1 carrot
  • ½ cup cabbage
  • ½ cup spinach
  • ½ bell pepper
  • ¼ cup flour (wheat, rye, chickpea, almond)
  • ½ tsp Svanetian salt (or other spices)
  • ½ cup water

 

Date chutney

  • 2 dates
  • 2 tbsp vinegar
  • 2 tbsp soya sauce

 

1 tsp olive oil - for frying

Instructions:

  • Grate the carrots
  • Grate or finely chop the cabbage (you can use both white and purple cabbage, or both)
  • Cut the bell pepper
  • Stir in vegetables, flour and spices. Pour water and stir again
  • Grease a preheated pan with oil and fry the vegetable mass like pancakes
  • Take out the pit from dates and soak them in water, blend with the rest of the ingredients
  • Dip the fried pancake in the date chutney and enjoy
