Ingredients:

• 2 cucumbers

Vegan cottage cheese
•    50g cashew cheese
•    50g tofu
•    1 Tbsp. Mint
•    ¼ tsp. Himalayan salt

Vegan caviar
•    ¼ cup water
•    Nori sheet
•    1 Tbsp. soy sauce
•    1 Tbsp. chia

Instructions:

For the vegan cottage cheese mash the tofu with a fork and mix in the cashew spread. Finely chop the mint and add to the cottage cheese.

For vegan caviar, blend water, soy sauce and nori sheet until you get smooth texture. Transfer it into the small jar and add chia. Wait at least 1 hour, so that the chia gets the taste of seaweed (fish, caviar).

For serving, cut the cucumber into round slices, spoon out the middle part and add in small amount of cottage cheese. Put "caviar" on top.
