Pickled Cucumber

Ingredients:
- 300g baby cucumber
- ½ chilli
- ½ garlic
- ½ tsp coriander or mustard seeds
- 1 bay leaf
- 1 tsp Himalayan salt
- 1:1 vinegar + water to fill the jar
Instructions:
- Wash well the jar, rinse with boiling water for sterilisation
- Wash the cucumbers, cut them in half and place them in the jar vertically
- Cut the pepper in half, remove the seeds and put half in the jar
- Add garlic, seeds and bay leaf in the jar
- Fill the jar with vinegar and water in equal proportions
- Cover the jar and let it seat at room temperature for 24-48 hours.
