Pickled Cucumber

Ingredients:

  • 300g baby cucumber
  • ½ chilli
  • ½ garlic
  • ½ tsp coriander or mustard seeds
  • 1 bay leaf
  • 1 tsp Himalayan salt
  • 1:1 vinegar + water to fill the jar

Instructions:

  • Wash well the jar, rinse with boiling water for sterilisation
  • Wash the cucumbers, cut them in half and place them in the jar vertically
  • Cut the pepper in half, remove the seeds and put half in the jar
  • Add garlic, seeds and bay leaf in the jar
  • Fill the jar with vinegar and water in equal proportions
  • Cover the jar and let it seat at room temperature for 24-48 hours.
