Ingredients:

• 2 red bell peppers
• 2 small tomatoes
• ¼ onion
• 1 clove of garlic
• 1 Tbsp lemon juice
• 150g water
• 2 Tbsp olive oil
• Salt and pepper
• 2 tsp cashew cheese
• A few basil leaves for garnish

Instructions:

Preheat the oven to 200 degrees.

Cut the pepper into large pieces and place on a baking sheet with the garlic. Drizzle with oil and season with salt and pepper. Bake in the oven for about 40 minutes.

Fry finely chopped white onion in a little oil. Add the roasted peppers and garlic, chopped tomatoes and water. Boil on low heat for 5-10 minutes. Blend. Add salt and pepper to taste.

Add lemon juice to the blender, stir and pour into bowls. Add cashew cheese on top of each portion and garnish with basil leaves.
